The story
Bún chả is the dish that put Hà Nội on the culinary map for many Western visitors — most famously, when Anthony Bourdain brought Barack Obama to Bún Chả Hương Liên in 2016, and the stall now has a permanent plaque commemorating the meal.
The dish is deceptively simple: grilled pork patties (often with a touch of sugar and fish sauce) over rice vermicelli, served with a bowl of diluted fish sauce dressing, sliced green papaya, and fresh chili. You dip the noodles, herbs, and pork into the sauce. The contrast between the charred, fatty meat and the bright, acidic dressing is what makes it.
The original Bún Chả Hương Liên, on Hà Nội's Lê Văn Hưu street, has been making bún chả since 1986. The owner, Mrs. Lê Thị Thiện, has refused multiple offers to franchise or sell the recipe, and queues still snake down the block at lunch.
