The recipe
Kwetiau Goreng is the Indonesian fried flat rice noodle. The noodle is a wide, flat rice noodle (kwetiau), and the stir-fry is sweet-savory thanks to a heavy hand with kecap manis. Unlike Chinese *char kway teow*, Indonesian kwetiau goreng is drier and slightly sweeter, with the same wok-charred smoky flavor. The classic version has shrimp, chicken, and eggs, plus chives and bean sprouts. It's sold everywhere from street carts to fancy Chinese-Indonesian restaurants, and is one of the most ordered dishes in Indonesia.
