Nasi Campur is the universal Indonesian meal format — a small mound of steamed rice surrounded by small portions of many different dishes: a piece of beef rendang or sate, a few spoonfuls of sayur, a hard-boiled egg, fried tempeh, a piece of chicken, sambal, krupuk, and a slice of cucumber. The *campur* means 'mixed', and the beauty of the dish is the variety. Every region has its own version: Nasi Campur Bali (with sate lilit and lawar), Nasi Campur Madura (with beef and trassi), Nasi Campur Jawa (with opor ayam and sambal), Nasi Campur Manado (with cakalang and sambal roa). The defining feature: the more dishes on the plate, the better.
