Sayur Asem is the Javanese sour vegetable soup — a clear, tangy broth built on tamarind, with a mix of vegetables: long beans, corn, chayote, young jackfruit, melinjo leaves and seeds, peanuts, and sometimes small dried shrimp. The defining flavor is the tamarind — a fresh, sharp tang that lifts the whole dish. Unlike most Indonesian soups, Sayur Asem is not spiced with chili (or only minimally); it's meant to be refreshing, sour, slightly sweet, and served alongside rice and a main dish. It's the perfect counterpoint to rendang, opor, or fried chicken. The soup is traditionally a Javanese home-cooking dish, but is now sold at warung across Indonesia.
