The recipe
Tinutuan, or Bubur Manado, is the signature breakfast porridge of North Sulawesi (Manado). Unlike most porridges, Tinutuan is built on rice AND a mix of vegetables — pumpkin, sweet potato, corn, long beans, spinach, kale, and young gnetum leaves (melinjo). The result is a colorful, hearty porridge that's both comforting and nutritious. It's traditionally served with a tray of side dishes: fried salted fish (*ikan asin*), fried tofu, fried tempeh, salted egg, sambal roa (a fiery chili sauce with smoked fish), and crispy krupuk. Tinutuan is the signature of Manado cuisine — a city where the food is famously spicy, and the breakfast is one of the most unique in Indonesia.

- ·Sambal roa is the signature — it's a Manado chili sauce with smoked roa fish. Find it at an Asian market or substitute with sambal terasi.
